Split Pea Soup

This soup reminds me of home. My mom would always invite the Chinese cousins over for Lunar New Year and serve them a ham — not Chinese. There would always be leftover ham, so pretty much once a year my mom would make this split pea soup with the post-New Year ham.
Ingredients
1 pound (454g) green split peas
Leftover ham
2 tablespoons unsalted butter or olive oil
1 medium onion, diced
6 cloves garlic, minced
A pinch dried thyme
2 bay leaves
2 carrots, chopped
6 cups unsalted chicken stock
Method
1) Sauté onions and garlic in oil. Add thyme, bay leaves, and carrots.
2) Add some chicken stock. Deglaze the bottom of the pan.
3) Add ham and split peas and remaining chicken stock.
4) Cook in a pressure cooker, or for a long time in a pot, until peas are dissolved and soup is thick.
